Pinterest Inspired Gingerbread Christmas Trees!

Hey Guys!  As I was scrolling through my Pinterest account a couple weeks ago looking for some more Christmas inspiration, I came across an image of a Christmas tree made from Gingerbread cookies in the shape of stars.  As usual I wondered what would actually happen if I tried to re-create that image I just saw?  So I did and it definitely met my expectations which is why I thought I would share the recipe and how I made it with you!

Gingerbread Ingredients:
125g butter, softened
100g (1/2 cup) brown sugar
180g (1/2 cup) golden syrup
320g (2 1/2) cups plain flour
1 tablespoon ground ginger
1 teaspoon bi-carb

Gingerbread Instructions:
1. Pre-heat the oven to 190°C (374°F).
2. Place butter and sugar in a bowl and beat until light and creamy.
3. Add all other ingredients into the bowl and beat on low speed until it forms a crumb like mixture.
4. Using your hands knead all the dough crumbs until it forms a smooth ball.  Refrigerate for 10 minutes or until the dough is slightly firm.
5. Roll the dough out to 4mm in thickness between two sheets of non-stick baking paper.
6. Using 5 different sized star cutters, the biggest one being 6cm in width at the smallest point and the smallest one being 3cm at the smallest point, cut out eight stars of each size.
7. Place the cookies on a baking tray lined with baking paper.  The two biggest stars need to be baked for 8-10 minutes and the three smallest stars need to be baked in the oven for 6-8 minutes.
8. Cool completely for about 30 minutes before decorating and assembling.

Royal Icing Ingredients:
1 egg white
240g icing sugar
Green gel food colouring

Royal Icing Instructions:
1. Beat the egg white for two minutes on high speed.
2. Mix in the icing sugar to the egg white until well combined.
3.  Add food colouring until you reach desired colour.


Christmas Tree Ingredients:
Gingerbread star cookies
Royal Icing
100g dark chocolate, melted
Cashous or any other similar decorations.

Christmas Tree Instructions:
1. Place two gingerbread star cookies of 6cm on top of each other using the melted chocolate to glue them together.  Repeat this with the next four smaller sized cookies, gluing each of them together with chocolate.  So your Christmas tree should have ten layers altogether, as pictured above.
2. Place your royal icing in a small piping bag* and pipe on each ‘branch’ going backwards and forwards to create a squiggly pattern as this is the most realistic decorating method.
3. Place the cashous on the royal icing as this will give your trees the effect that they are decorated with baubles.  Now you have completed your trees so be sure to enjoy them!

  1. Oh yes.yes.yes!! I love ginger bread and these look gloriously adorable. I don’t usual have icing with mine but after seeing yours I definitely need to eat one now. Like RIGHT NOW!!! lol maybe I’ll put this on my baking to do list.
